- 1 cup dry red lentils, rinsed
- 1 ¼ cups water (for blending)
- 2 large eggs
- 1 tsp baking powder
- ½ tsp baking soda
- ¼ tsp salt (or to taste)
- 1 tsp garlic powder
- 1 tsp oregano or thyme (optional)
- 1 cup grated cheese (cheddar, mozzarella, or a mix)
- 2 tbsp olive oil
- Optional: 2 tbsp grated Parmesan for topping
