Step 1: Clean & Boil the Chicken Feet
- Trim claws and rinse feet under cold water.
- Bring a large pot of water to boil. Add vinegar and ginger slices.
- Boil chicken feet for 10–15 minutes to remove odors and impurities.
- Drain and rinse with cold water.
Step 2: Braise for Tenderness
- In a pot, combine blanched chicken feet with water to cover, 2 tbsp soy sauce, star anise, and crushed garlic.
- Bring to a boil, then lower to a simmer and cook 45–60 minutes, until tender.
- Drain and set aside.
Step 3: Make the Spicy Glaze
- Heat oil in a wok or deep pan over medium heat.
- Add minced garlic and ginger; stir-fry for 30 seconds.
- Add chili paste, soy sauces, oyster sauce, sugar, and five spice.
- Pour in water/broth and bring to a simmer.
Step 4: Coat the Chicken Feet
- Add cooked chicken feet to the sauce.
- Stir well to coat and cook 10–15 minutes, stirring occasionally, until sauce thickens and glazes the feet.
Serve With:
- Steamed rice
- Pickled vegetables or kimchi
- Cold beer or iced tea for contrast
Optional Add-ons:
- Sprinkle with sesame seeds or chopped green onions
- Add dried chilies for more heat
- Stir in a dash of black vinegar at the end for brightness
