Step 1: Clean & Boil the Chicken Feet

  1. Trim claws and rinse feet under cold water.
  2. Bring a large pot of water to boil. Add vinegar and ginger slices.
  3. Boil chicken feet for 10–15 minutes to remove odors and impurities.
  4. Drain and rinse with cold water.

Step 2: Braise for Tenderness

  1. In a pot, combine blanched chicken feet with water to cover, 2 tbsp soy sauce, star anise, and crushed garlic.
  2. Bring to a boil, then lower to a simmer and cook 45–60 minutes, until tender.
  3. Drain and set aside.

Step 3: Make the Spicy Glaze

  1. Heat oil in a wok or deep pan over medium heat.
  2. Add minced garlic and ginger; stir-fry for 30 seconds.
  3. Add chili paste, soy sauces, oyster sauce, sugar, and five spice.
  4. Pour in water/broth and bring to a simmer.

Step 4: Coat the Chicken Feet

  1. Add cooked chicken feet to the sauce.
  2. Stir well to coat and cook 10–15 minutes, stirring occasionally, until sauce thickens and glazes the feet.

Serve With:

  • Steamed rice
  • Pickled vegetables or kimchi
  • Cold beer or iced tea for contrast

Optional Add-ons:

  • Sprinkle with sesame seeds or chopped green onions
  • Add dried chilies for more heat
  • Stir in a dash of black vinegar at the end for brightness
