Potato lasagna with chicken

1. Preheat the Oven:

  1. Preheat your oven to 375°F (190°C).

2. Prepare the Potatoes:

  1. Peel and thinly slice the potatoes. You can use a mandoline for even slices.

3. Cook the Chicken:

  1. Season the chicken breasts with salt, pepper, dried oregano, and dried basil.
  2. Cook the chicken in a skillet over medium heat until fully cooked. Shred the cooked chicken and set it aside.

4. Make the Sauce:

  1. In a saucepan, melt the butter over medium heat.
  2. Stir in the flour to create a roux. Cook for a minute to remove the raw taste of the flour.
  3. Gradually whisk in the milk to avoid lumps.
  4. Continue cooking and stirring until the sauce thickens.
  5. Season the sauce with salt, pepper, and grated Parmesan cheese. Stir until the cheese is melted and the sauce is smooth. Remove from heat.

5. Assemble the Potato Lasagna:

  1. In a greased baking dish, start by layering sliced potatoes.
  2. Spread a portion of the shredded chicken and chopped onions on top of the potato layer.
  3. Pour a portion of the white sauce over the chicken layer.
  4. Sprinkle a layer of mozzarella cheese on top.
  5. Repeat the layers until you’ve used all the ingredients, finishing with a layer of cheese on top.

6. Bake:

  1. Cover the baking dish with aluminum foil and bake in the preheated oven for about 45 minutes.
  2. Remove the foil and bake for an additional 15-20 minutes or until the top is golden brown, and the potatoes are tender.

7. Serve:

  1. Allow the potato lasagna to rest for a few minutes before slicing.
  2. Serve hot, and enjoy your delicious potato lasagna with chicken!
