Smothered Beef Ribs

Ingredients:

  • 1 lb fresh okra, sliced
  • 1 lb shrimp, peeled and deveined
  • 1 lb crab meat (fresh or canned)
  • 1 lb smoked sausage (Andouille or Kielbasa), sliced
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 4 cloves garlic, minced
  • 2 cups chicken broth
  • 1 tablespoon tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • Cooked rice, for serving

Instructions:

  1. Prepare Okra and Sausage:
    • In a large pot or Dutch oven, heat a tablespoon of vegetable oil over medium-high heat. Add sliced sausage and cook until lightly browned. Remove sausage from the pot and set aside.
  2. Saute Vegetables and Seafood:
    • In the same pot, add chopped onion and bell pepper. Cook until softened, about 5 minutes. Add minced garlic and cook for another minute until fragrant. Stir in tomato paste, dried thyme, and smoked paprika.
  3. Simmer with Broth:
    • Pour in chicken broth and bring to a simmer. Add sliced okra and cook for 15 minutes, stirring occasionally, until okra is tender.
  4. Add Seafood and Sausage:
    • Stir in shrimp, crab meat, and reserved sausage. Simmer gently for another 5-7 minutes, or until shrimp are pink and cooked through. Season with salt and pepper to taste.
  5. Serve:
    • Serve smothered okra with crab, shrimp, and sausage hot over cooked rice.
