Stuffed Meatloaf
Ingredients
For the Meatloaf Mixture:
- 2 lbs ground beef (80/20 works best for flavor and moisture)
- 1 medium onion, finely chopped
(reserve about half for the meatloaf and half for the stuffing) - 2 garlic cloves, minced
(reserve 1 clove for the meatloaf and 1 for the stuffing) - 1 large egg, lightly beaten
- 1/2 cup breadcrumbs
- 1/3 cup milk
- 2 tablespoons Worcestershire sauce
- 1 teaspoon salt (adjust to taste)
- 1/2 teaspoon freshly ground black pepper
- 1/2 teaspoon dried thyme
- 1/2 teaspoon dried oregano
- 2 tablespoons chopped fresh parsley
For the Stuffing Filling:
- 1 cup mushrooms, finely chopped
(you can use white, cremini, or your favorite variety) - 1/2 cup onion (from the reserved portion), finely chopped
- 1 garlic clove, minced
- 1/2 cup shredded cheddar or mozzarella cheese
- 1/4 cup breadcrumbs
- 1 tablespoon Worcestershire sauce
- Salt and pepper, to taste
- 1 tablespoon olive oil
For the Optional Glaze:
- 1/4 cup ketchup
- 1 tablespoon brown sugar
