Stuffed Meatloaf

Ingredients

For the Meatloaf Mixture:

  • 2 lbs ground beef (80/20 works best for flavor and moisture)
  • 1 medium onion, finely chopped
    (reserve about half for the meatloaf and half for the stuffing)
  • 2 garlic cloves, minced
    (reserve 1 clove for the meatloaf and 1 for the stuffing)
  • 1 large egg, lightly beaten
  • 1/2 cup breadcrumbs
  • 1/3 cup milk
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon salt (adjust to taste)
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried oregano
  • 2 tablespoons chopped fresh parsley

For the Stuffing Filling:

  • 1 cup mushrooms, finely chopped
    (you can use white, cremini, or your favorite variety)
  • 1/2 cup onion (from the reserved portion), finely chopped
  • 1 garlic clove, minced
  • 1/2 cup shredded cheddar or mozzarella cheese
  • 1/4 cup breadcrumbs
  • 1 tablespoon Worcestershire sauce
  • Salt and pepper, to taste
  • 1 tablespoon olive oil

For the Optional Glaze:

  • 1/4 cup ketchup
  • 1 tablespoon brown sugar
